Originally released in 2021, the Sour Bikes Pasta Party has quickly become the Dresden, Germany-based brand’s most popular model. It fills the gap between the Purple Haze big-tired gravel bike and the 140mm travel Crumble hardtail. It’s an XC bike at heart, but for 2025 (and beyond), it has been updated to be more capable with slightly more modern specs.
So, what’s new? The 2025 Sour Pasta Party now features 100% external cable routing, a new 44mm headtube, a 31.6mm seatpost (instead of 27.2mm), a SRAM UDH dropout, new aluminum FM160 brake mount, and geoemtry that’s better suited for 100-120mm travel suspension forks, with 120mm being the sweet spot.
It maintains a 73mm BSA threaded bottom bracket, boost hub spacing, thru-axles, clearance for 29 x 2.4″ tires, and is made from custom-drawn multi-butted heat-treated Chromoly steel. As always, each frame is handmade at their facility in Saxony, just outside of Dresden. The frame has two standard bottle mounts, additional mounts under the downtube, no rear rack mounts, stealth dropper post routing, and the seat tube and top tube are ovalized in sections to dial in the stiffness and compliance of the frame where it matters. Each frame includes an eccentric bottom bracket for adjustment and singlespeed setups, and Sour also has options for partial builds and fork add-ons.

The Pasta Party’s geometry has seen a significant shift away from its pure XC beginnings, with a 66.6° head tube angle (previously 69°), longer wheelbase, longer reach, and a lower bottom bracket. At first glance, it looks like a super capable all-rounder hardtail that should feel at home shredding singletrack as well as loaded up for big backcountry rides and bikepacking.
